Naked Berry Cake

Sometimes the stars align and both girls will nap at the same time

and other times you whip out the Ergo, strap the littlest to your back and bake a cake.

I don't know what it is about fall, but as soon as I'm able to open up those windows I just want to bake and craft all. the. things.

I have this little obsession with naked cakes, partly because they are some of the prettiest cakes I've ever seen and partly because I don't really like icing. Handsome had this test he was taking yesterday and no matter the outcome, cake was going to be had.

So let me tell you how easy this cake is, because I obviously have no time to bake from scratch nowadays ;)

1 package of chocolate cake mix, fresh berries, cream cheese frosting

1. Bake cake -- one package made all three rounds, once all the cake rounds are cooked make sure they are completely cooled off before icing!
2. Whip up the frosting with some berries
3. Ice cake when completely cooled -- I actually don't even ice the middle of the cake, mainly the outer part because we're just not fans of it
4. Garnish! -- I made the trees from melting chocolate onto wax paper and once they were in the freezer for a bit, placed them on top.

EASY right!?

Handsome and I had two huge slices while watching The Voice and planning our mini getaway in central Oregon this weekend. I'm dying to get in the woods (hence the trees on top of the cake) before it gets too cold to take the girls out. Oh, and happy second day of fall! Hopefully I can get a dual nap time and knock out some crafts. Anyone else still slumped on costumes?

  1. This is so pretty! I love the chocolate trees on top :)

  2. YUM! Thanks for sharing! It's amazing what you can get done with the Ergo! ;)

  3. darn you. i'm off sugar for the next 56 days (but whos counting?!) and this has me literally DROOLING. i kid you not. it looks so dang good. i want it NOW.

also. please share how you aubrey on your back in the ergo!!

  4. Yay for cake, and yay for the Ergo! This looks great! :)
