Some very lovely ladies are hosting a link up for St. Patricks Day and I thought I'd play along... any excuse for me to make dessert, right? Anyone who knows me knows I could eat sweets day and night. I'm honestly surprised I didn't gain 50+ lbs when I was pregnant.
I accidentally bought puff pastry sheets a while back thinking that's what you used for pie crusts.. don't laugh. I've obviously never made a pie until that day. I wanted to use it for something since we will be moving soon, I didn't want them to go to waste. So little kiwi cheesecake cups were made! These were a breeze to make because I took the easy way out and bought the no bake cheesecake. This mama has zero time to be baking from scratch ;)
Like my attempt at a shamrock shaped kiwi? I've never used puff pastry before, but I loved the flakiness of it and you can never go wrong with cheesecake, so these turned out perfect.
>> 1 box Pillsbury puff pastry sheets
>> 1 box no bake cheesecake mix
>> Food coloring
>> I only used one sheet of the puff pastry and cut it into 9 little squares. You can always use both sheets, but I wanted to half the cheesecake mix to make strawberry cheesecake (I have a problem)..
>> Preheat oven to 400 degrees and grease a cupcake pan. Place one square into the bottom of the cupcake pan to form little bowls and brush egg whites over the top to make it golden. Bake for 12-15 minutes
>> Make your cheesecake mixture according to the box and add in 3-4 drops of food coloring.
>> Once the pastry is done baking let it cool before spooning cheesecake mixture into the cups. (I pulled the middle of my little pastry cups out to allow more cheesecake to fit inside)
>> Garnish with kiwi! You could even add kiwi into the cheesecake if you're real crazy!
