Greek Panzanella

Talk about the best salad ever!
I don't even know where this recipe came from, but I am so glad I stumbled upon it. Now that summer is approaching, we will making huge bowls of this just for dinner. We even ate it for dessert the other night.. 

The original recipe can be found here. but we often change it up a bit depending on what we have in the fridge. 

>> 1 small loaf of French bread or Italian.. whatever you prefer!
>> 2 Bell peppers (one red, one green)
>> 1 Cucumber
>> Several cherry tomatoes cut in halves
>> Feta
>> 2-3 Stalks of celery
>> ½ of a red onion

& then we follow the directions accordingly for the dressing. In fact, we don't even buy store bought dressing anymore because this is so good. 
It's a vinegarette dressing made with:
>> 2 minched cloves of garlic
>> 1TSP oregano
>> ½ TSP Dijon mustard
>> 1/4 red wine vinegar
>> ½ C grape seed oil
>> salt and pepper to taste

 In a skillet, heat up 2-3 tablespoons of grape seed oil (or olive oil, but we LOVE grape seed) and dice up one inch cubes of the bread. Toss them into the pan and keep tossing them until brown and crunchy. Try not to eat them all before your salad, they are that good :) Next, cut up remaining ingredients, add them to a bowl, pour some dressing on and you're done!

We've made this several times for dinner parties and everyone always loves it. It's so fresh and the best part is the bread soaked in the dressing. YUM. I just might have to ask handsome if he will pick up a cucumber from the store so we can make it again tonight.
